Abita
Our beers and ales use four ingredients: water, malted barley (and wheat in our specialty wheat beer), yeast, and hops. Since its days as a Choctaw Indian settlement, Abita's spring water has been a cherished natural resource. The Choctaws used it for medicinal purposes, and tourists at the turn of the century flocked to the springs to "take the water" and recuperate from yellow fever. Aside from its historical merit and clean taste, the water's specific chemical composition makes it perfect for brewing beer. Our water is drawn from a deep well and is tested free of manmade contaminants. While most breweries must chemically prepare their water for the brewing process, we take ours straight from the source. A beers color and taste are determined largely by the amount and type of malt used. Abita uses 2 types of PALE MALT, and CRYSTAL, MUNICH, WHITE WHEAT, CHOCOLATE MALT. Most of the large domestic and some import breweries use corn and rice. These ingredients are cheaper sources of starch than the barley we use in our beer. The result is a beer lighter in taste, body, and color. We culture our own yeast from strains developed by German brewers. Ales are made with top fermenting yeast, while our lagers are made with the bottom fermenting type. While often undervalued as an ingredient, we select different strains of yeast from the hundreds available for each recipe we develop. The flavor of beer is greatly affected by the hops used in the brewing process. BITTERING HOPS are added first, both as a preservative and for flavor. The primary bittering hop we use is CHINOOK. AROMATIC HOPS are added later in the boil to create distinctive flavor and aroma. Among the aromatic hops we use are MT. HOODS, PERLES and WILLAMETTES. Abita's beers contain no ingredients other than Abita’s spring water, malted barley, hops and yeast. We use no preservatives, additives or stabilizers. Our beers are cold filtered. The result – beers as fresh as any available with nothing but the natural flavors of malt, hops and water.
