Winemaking at the Jordan Winery integrates new-world technology with old-world artistry in a manner designed to enhance the inherent characteristics of noble wine grapes. Vineyard workers deliver the hand picked grapes to the winery, where the best equipment available is used to produce Jordan Chardonnay and Jordan Cabernet Sauvignon. Musts are processed in pneumatic presses to obtain the juices. Carefully controlled fermentation takes place in stainless steel tanks to converse the natural fruitiness of the grapes. A secondary malolactic fermentation softens the wines natural acidity and helps its complexity to evolve. The Chardonnay is aged in French oak exclusively, and a combination of French and American oak cooperage for aging the cabernet.
